Donuts Donuts Donuts!!!

I LOVE Donuts, but I also want to try to not get too much sugar in each time I have a craving...aka like every 3 days ;)

So I searched and found this great recipe, but made a few modifications since I found the original was a little dry!

6 donuts, serving size 1

  • 2 scoops vanilla protein (I used Vegan Vanilla Shakeology in mine)

  • 1/4 cup almond meal

  • 1 Tbs. coconut sugar

  • 1/2 tsp. baking powder

  • 1/2 tsp. cinnamon

  • 1 tsp. pumpkin pie spice

  • 1/4 tsp. nutmeg

  • 1/2 cup pumpkin puree

  • 4 Tbs. almond milk

  • 2 eggs (use 1/2 cup applesauce to make vegan!)

  • 1Tbs. melted coconut oil

  • 2 Tbs. plain greek yogurt (or  coconut yogurt if vegan)

  • 1/2 tsp. maple extract

  • 2 tsp. honey (or agave for vegan)

1. Mix all the dry ingredients together

2. Mix all the wet ingredients together

3. Combine by putting the wet into the dry

4. Stir and add a little extra pumpkin puree if needed. Your batter will be a little thick, just spread it into your donut pan (Target sells these!)

5. Bake 350* for 12 minutes or until a toothpick comes out dry

6. Combine your icing ingredient while it cooks then spread your icing

***Optional to top with mini chocolate chips, coconut flakes, Graham crackers, sprinkles, fruity pebbles....whatever you heart desires!
