Santa Slimdown Cookies

We're officially into our Santa Slim Down challenge!  If you've not joined into the group yet, there's time, I just need to know more about your goals first and your interest - go here

 

I want to share with you one of the recipes we'll have in the group later this month...because let's face it, you likely have been invited to a holiday gathering (or two or three) just like I have been, you're trying to maintain or even lose weight but these dang cookie exchanges, they're getting you!  Fear not! I have a few solutions. 

 

First, show up after having eaten a solid meal.  One loaded with about 50% veggies and 50% protein, skip carbs bc I want to you to save a carb for a cookie - duh!

Next, make a cookie that's a little healthier, because Cookies. Cakes. Pie. They’re everywhere.

 

No matter how hard you’re working to stay on the healthy path, it can be nearly impossible to avoid these sweet temptations. Luckily, you can avoid the high-calorie desserts AND still enjoy the season by making your own healthy treats.

 

With coconut whey protein and shredded coconut, these coconut macaroons are naturally low in sugar. Bite-sized balls of goodness that will satisfy your sweet tooth without sacrificing your waistline 🙌

Pro tip: Coconut whey protein can be found at health food stores or online. Even at Target, grab the Tone it Up coconut protein mmmm


Ingredients

  • 2 large egg whites
  • 2 tbsp coconut whey protein
  • ⅔ cup unsweetened shredded coconut
  • 2 tbsp dark chocolate morsels

Instructions

  1. Preheat oven to 325° F.
  2. Place egg whites in a clean medium mixing bowl; beat until stiff peaks are formed.
  3. Gently fold in whey protein and shredded coconut.
  4. Drop by rounded Tbsp. onto prepared baking sheet.
  5. Bake for 13 to 15 minutes or until browned; cool.
  6. Melt chocolate in a small microwaveable bowl for 30 seconds at 50% heat. Stir and repeat until nibs melt.
  7. Drizzle melted chocolate over cooled macaroons.
