Pumpkin Energy Bites

Where my Pumpkin Spice people at?! This recipe is for you! All you need is 5 ingredients and 15 minutes… and you’ll be savoring the flavors of fall!

These have popped up almost every day in our wellness Community group on FB as a treat that's being enjoyed by quite a few women. I know I LOVE energy bites, while I'll be honest, I'm not using 3 packets of my Pumpkin Spice Shakeology to make them, I'm using my Vanilla bc Hey, that pumpkin is LIMITED and I'm using it sparingly, they turn out AMAZING just w/ Vegan Vanilla Shakeology and 1-3 tsp pumpkin spice (pending on how spiced up you want it!)

Ingredients

  • ¾ cup dry old-fashioned rolled oats
  • ¾ cup all-natural smooth almond butter
  • ½ cup pure pumpkin puree
  • ¼ cup raw honey
  • 3 scoops Pumpkin Spice - Plant Based Shakeology (if you don't have this sub in a vanilla protein and add 1tsp pumpkin spice mix)

Instructions

  • Combine oats, almond butter, pumpkin, honey, and Shakeology in a medium bowl; mix well with clean hands (or a rubber spatula).
  • Shape mixture into eighteen balls, approximately 1 Tbsp. each.
  • Serve immediately (or store in an airtight container in the refrigerator).
