Where my Pumpkin Spice people at?! This recipe is for you! All you need is 5 ingredients and 15 minutes… and you’ll be savoring the flavors of fall!

These have popped up almost every day in our wellness Community group on FB as a treat that's being enjoyed by quite a few women. I know I LOVE energy bites, while I'll be honest, I'm not using 3 packets of my Pumpkin Spice Shakeology to make them, I'm using my Vanilla bc Hey, that pumpkin is LIMITED and I'm using it sparingly, they turn out AMAZING just w/ Vegan Vanilla Shakeology and 1-3 tsp pumpkin spice (pending on how spiced up you want it!)

Ingredients

  • ¾ cup dry old-fashioned rolled oats
  • ¾ cup all-natural smooth almond butter
  • ½ cup pure pumpkin puree
  • ¼ cup raw honey
  • 3 scoops Pumpkin Spice - Plant Based Shakeology (if you don't have this sub in a vanilla protein and add 1tsp pumpkin spice mix)

Plant Based Meal Prep

This plant based meal plan looks so delicious - you won't even miss meat! 

Breakfast includes a Vegan Caprese Avocado Toast (ya'll I LOVE me some avocado toast, and caprese bites of little cherry tomatoes, mozzarella balls, basil or dipped in pesto and drizzled w/ balsamic are what always bring to parties these days, so that toast is like 100% up my alley and I think you'll fall in love too.

Also, my husband, kids and I LOVE the sweet potato curry with chick peas and coconut milk! It's just sweet enough for them and spicy enough for my husband! If you can't do spice or have family that doesn't do spice, do less of the curry or give yourselves a big dollop of plain greek yogurt to calm that spice down.

Also, total side bar, but I went almost all vegan in early 2018 when I was breastfeeding our youngest daughter and had to cut out all dairy product & then I decided to cut out the meat after watching too many Netflix documentaries (you know what I'm talking about if...

Pumpkin Spice Smoothie

I'm all about pumpkin recipes - Pumpkin Spice Shakeology, pumpkin donuts, pumpkin energy bites, pumpkin oatmeal… you get the picture (and you can find all these recipes in this month’s meal plan guide that I shared with my community members in our private FB group)! But there’s something about the combination of pumpkin spice and ginger that boosts the “wow” factor in any recipe. So, save this one for when your pumpkin spice shakeo arrives and elevate that shake! 

I made this one BEFORE pumpkin Shakeology came into a limited relase with Vegan Vanilla Shakeology and added a tsp of my favorite pumpkin pie spice blend I found at Trader Joe's and it worked perfect - so just know you can make this YEAR ROUND if you love pumpkin and only have a Vanilla protein mix like my Vegan Vanilla Shakeology!

5 Day No Cook Meal Plan

I can't wait to try the recipes in this 5 Day No Cook Meal Plan. I'm a fan of anything that can save me time spent in the kitchen so I'm most excited to try the Tropical Overnight Oats -- YUM!

Also, for dinner there's a chicken burrito bowl that's loaded w/ veggies & I think I will even be able to get the kids to eat this!

I wanna give you FULL disclosure, I RARELY do an entire meal prep anymore, what I use these meal preps I'm sharing here in my blog for is to help new clients or people like you that maybe LOVE meal prepping or want to get into it. WHY share something I don't use as much?!  BC I used to use FULL meal preps ALL THE TIME when I was first learning to eat helathier - it simplified my life so I 100% believe they work.

Again, if it simplified, why stop?  Well now I"m at a point where my family and I have about 8 meals the kids will eat on rotation (maybe I'll save those recipes for another day) but alllll of the meals have stemmed from ideas...

Fit Friday Finds August 16th!

Happy Friday!! This week I kicked off Phase 2 of Morning Meltdown 100 - seriously, this program is blowing my mind!

One of our Be Well coaches, Heather is crushing this program and REALLY focusing on her nutrition. Fit Friday Finds August 9th!

Have you ever heard of Wonder Whip? Well, it's taking social media by storm and now I know why!

Ilana Muhlstein Nutrition's Wonder Whip recipe is packed with protein and is a great way to help satisfy your sweet tooth. Try her recipe for her Reese’s Cup Wonder Whip and let me know what you think!

• 3/4 cup 0% plain Greek yogurt

Fit Friday Finds July 26!

I am SO obsessed with the new vegan Recover. I used the regular for years and although I'm not vegan, I really like that Beachbody has that option now. The difference between the two is the protein. Original Recover has whey, and vegan uses a plant based (pea) protein. Either way, they're both delicious and taste just like your childhood Ovaltine or Nesquik!

What I love so much about this Sweet Potato Hash with Eggs sheet pan recipe is that it can be made for so many things! Have a brunch with your girlfriends, want to meal prep for the week or even have leftovers for dinner? - this is the recipe!

Ingredients

  • Parchment paper
  • 2 medium sweet potatoes cut into 1-inch cubes
  • 1 medium onion chopped
  • 2 cloves garlic finely chopped
  • 1 medium red bell pepper chopped
  • 1 cup black beans drained, rinsed
  • 1 cup corn kernels
  • 1 Tbsp. + 1 tsp. olive oil
  • 1 1/2 tsp. chili powder
  • 1/4 tsp. ground cumin
  • 1/4 tsp. ground smoked paprika
  • 1/2 tsp. sea salt or Himalayan salt divided use
  • 1/2 tsp. ground black pepper divided use
  • 8 large eggs
  • 2 Tbsp. finely chopped fresh cilantro

Even if you're not, I wanted to provide you some awesome food that's summer geared and a crowd pleaser - you can grill up a few extra of these Mediterranean Turkey Burgers this weekend to pack for lunches or have for dinner!

Ingredients

  • ¾ cup reduced-fat (2%) Greek yogurt
  • 2 Tbsp. fresh lemon juice
  • 2 cloves garlic finely chopped, divided use
  • ¼ tsp. dried dill weed
  •  lbs. 93% lean ground turkey
